In Dokshytsy, lavash production using Armenian technology has begun
The Dokshitsy bakery, a branch of the open joint-stock company "Vitebskhlebprom", is constantly mastering the production of new types of products.
The enterprise director, Alexey Baykov, says that the product range changes almost completely twice a year. Every month, the plant offers new types of bakery and confectionery products that are in demand among local residents, as well as in neighboring districts and in Minsk.
Dokshitsy bakers strive to find products that would appeal to both villagers and townspeople. In villages, they prefer ordinary shaped bread, which can be diversified with various additives, while Minsk residents prefer sliced bread, and even with dried apricots and raisins. Oatmeal cookies, pastries, and cakes are also very popular.
The enterprise is equipped with everything necessary for the production of high-quality products. A major reconstruction of the plant was carried out in 2007, when new ovens were installed in the bakery shop. The following year, a modern dough dividing line was purchased, and then 3 more ovens were bought for baking confectionery, bakery products, and hearth breads. This allowed the product range to be expanded to 50 items.
Competition with other bakeries requires constant searching. So, in Dokshitsy, they decided to learn how to bake lavash.
– Some Belarusian enterprises, particularly in Grodno and Gomel, produce it on special lines, but it differs from real Caucasian flatbreads. Therefore, our specialists traveled to the Moscow region, where Armenians opened a lavash production. They gladly shared their technology, – explains Alexey Baykov.
Last year, a dough sheeter was purchased in Turkey, and an oven in Russia, but Armenian flatbreads cannot be made without manual labor. Thanks to the skill of the Dokshitsy craftswomen, they turn out to be as thin as a newspaper sheet. Lavash is baked twice a week and does not stay on the shelves for long. It is also loved in Polotsk, Novolukoml, and Minsk, from where orders for this type of product constantly come.
– I have tried flatbreads from other manufacturers, but ours are the tastiest, – praises the bakery director his products.
His words are confirmed by everyone who has tasted "Dokshitsy Lavash," which is made according to a traditional Armenian recipe with the love of Belarusian bakers.
